Weighing between 1.5 - 3kg, with tender, very fine flesh that has a sweet nutty flavour. Red Kuri squash, or Hokkaido squash, is incredibly versatile. The skin can also be eaten and you can grill, roast or sauté these beauties. Great roasted with sage and Parmesan cheese, or made into a silky-smooth soup, lightly curried and a dash of coconut milk.
